Crispy, curled corn ribs made in the air fryer with smoky seasoning and bright lime—perfect for a quick snack or side dish.

Ingredients

4 ears fresh corn

2 tbsp olive oil or melted butter

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

Optional: lime wedges, chopped cilantro, grated cotija or Parmesan cheese

Instructions

1. Trim both ends of each corn cob to create flat bases.

2. Stand cob upright and slice lengthwise into quarters to form “ribs.”

3. In a bowl, mix olive oil, garlic powder, smoked paprika, chili powder, salt, and pepper.

4. Brush seasoning mix over each rib generously.

5. Preheat the air fryer to 400°F (200°C).

6. Place ribs in the basket in a single layer.

7. Air fry for 10 minutes, flip, then cook 2 more minutes until curled and crisp.

8. Serve immediately with lime wedges, fresh herbs, and cheese if desired.

Notes

Microwave corn for 2 minutes before slicing for easier cutting.

Season right before cooking to keep texture crisp.

Dips like chipotle mayo or herbed yogurt pair well.
